Eric Church’s whiskey brand, Whiskey JYPSI, is dropping what it claims is its most “historically significant” release yet: Legacy Batch 003. Named “The Declaration,” this whiskey honors the 250th Anniversary of the Declaration of Independence and is a rye whiskey, because according to JYPSI Whiskey Maker Ari Sussman, “rye was the whiskey of revolutionaries.”

Sussman clarifies that rye whiskey was the original “American” whiskey, well before bourbon, and claimed that for this release, the JYPSI brand looked to the whiskeys of the past.

“To mark the 250th Anniversary, we wanted to make something that is more than a commemorative bottle; it’s a testament to the grit, restlessness and innovation that built this country” Church explained in a news release.

The Declaration possesses a mashbill composed of 60% rye, 30% corn and 10% malt. As for the liquid, Sussman sought to blend 8- to 12-year-old rye whiskeys sourced from Indiana for the rye component. The aim was to replicate a Maryland-style rye, akin to something George Washington would have distilled.

The second component, a 20- to 25-year-old Canadian corn whiskey, aged for an extended period of time in American oak — two and a half years, to be exact — before JYPSI added it to the blend. The final component, a malt distillate, is an 8-year-old American single malt from Virginia, and the brand claims it adds a high-toned florality to the whiskey. For the finishing process, JYPSI finished the whiskey in apple brandy barrels from George Washington’s historic Mount Vernon Distillery.

“This whiskey is a textbook example of disciplined, persceptive blending, which maintains control of an aroma and flavor channel that never breaches its boundaries,” Whiskey Blender and Author F. Paul Pacault said in a news release. “The whiskey’s virtues are always apparent but never exaggerated. It’s compact, strong and elegant. In a word, superb.”

The Declaration has a suggested retail price of $199.99 and clocks in at 57.87% ABV.

JYPSI was started by serial entrepreneur Raj Alva and the country music singer, Eric Church, after he wanted to create a whiskey that would seem to defy genre, like his music. The “Drink In My Hand” singer and serial entrepreneur sought out the talents of master distillers and blenders.

They eventually brought on Ari Sussman, a former member of the wine industry who made the switch to whiskey. Sussman brings his knowledge from working in the wine world to distillation, particularly in terms of scientific acumen, collaboration and vigilance, according to the brand.

JYPSI’s Legacy Series focuses on sourcing extended-age whiskeys from a variety of distilleries and blending them together, shining a light on higher-age statement juices from the hidden corners of the world. True to form, the releases are genre-bending whiskeys, inspired by Church’s and Alva’s vision.
