The Schtick: The final of the Renaissance 2nd collection, this is an 87 Cassou – a favorite domain of mine over the years. Aged for 35 years, it’s no slouch and bottled at 47.4% ABV. Let’s dive in!

Age: 35 Years
Nose: Gorgeous rock candy, candied fruits, ginger, big black berry, toffee and pear, plum and fig on the nose. Good lord it’s rich.
Taste: Rich on the palate, loads of sweet fig, date, blackberry, cherry, tobacco, a hint of cola, rancio. Gorgeous and packed with sweet oak and candied ginger.
Finish: Long finish, heavy, rich and full of toffee, berry, caramel and waffle cone, sweet oak and toffee.
Overall: Cassou kills it again with the stunner of this collection and a profile I can hardly get enough of. Absolutely fantastic stuff.
