  • T8ke’s Tasting Notes: Rich nose that pops with ango, blackberries, a fat, rich sweetness like a great barrel aged manhattan and no shortage of oak and honey. Rich palate, oaky and dry with big blackberry and caramel character. Long, oak driven finish.

  • T8ke’s Tasting Notes: Bright on the nose: strawberries and cream, rich and vanilla forward. Unusual and fun, bright and fruity with a touch of that tart strawberry note. There used to be these hard candies that were like Creme Savers or something – they have a strawberry vanilla cream flavor that brought me back when I tried this. Paired with oak and light butterscotch, this is a bright and fun profile with no shortage of oak.

  • T8ke’s Tasting Notes: One profile I find in Dickel that I love is this sweet tea and black tea note: caramel and honey with good ol’ southern sweet tea, light butterscotch and the rich, balancing oak. This pour is dead on with that profile, sacrificing the usual candied orange and caramelized sugars I get in these older barrels with a sweet tea and sweet oak delight.

  • T8ke’s Tasting Notes: Rich on the nose: butterscotch, creme brulee and candied orange slices meet in a savory, fruity, balanced profile that’s old and woody with delicious citrus character. Palate is rich and woody, aromatic and spritely with loads of old fashioned spice and candied orange peels that reminds me of the candied fruit notes I get in old russells bottlings – it’s both bright and citrusy with rock candy sugars and a hint of woody funk.

  • T8ke’s Tasting Notes: Huge nose: dank and full of pipe tobacco, figs, honey, some stewed fruits and plums meets big oak – heavy tannin, a light bit of espresso, toffee and buttercream with amaro notes – sort of averna adjacent with blackberry, syrupy sweetness and heavy oak once more. 


Week 3 – Pinhook 10 Year Single Barrel Vertical Series Bourbon Single Barrel Select

  • ABV: 54.8% ABV
  • T8ke’s Tasting Notes: Huge nose with tons of toffee, like the smell when you walk by a toffee caramel popcorn vendor: big sweet dessert and caramelized sugar notes, honey, rich spice and cinnamon, brown butter. The palate is viscous and oak forward – packed full with dessert and sweet character: more cinnamon here, strong oak, lovely caramels and caramelized sugar. A development here is rich custard-y vanilla, a little pepper. Long finish, back to its caramel popcorn roots and it’s oh so pronounced.
