Nose: Big, bold fruits – cherry, gingerbread, clove, ginger and black pepper with black berry, boysenberry and a syrupy, rich, ango style bitterness that’s all good stuff with the syrupy fruits.
Taste: Rich on the palate, dusty and woody, peppery and savory with a great deal of espresso, cocoa, ginger, pepper, some faint vanilla and gobs of savory, toasted caramel. Deep, dark, sweet, savory.
Finish: Long finish. A prickle of heat but wonderful complexity and no shortage of character. Gorgeous, savory, fruity, heavy on blackberry, ginger, gingerbead, oak, a good deal of orange peel. I love how deep and dark this starts and it ends brighter, a touch acidic, lovely fruity character.
Overall: Hover Hawk is like few pours I’ve had before: it starts deep and savory and brooding and ends bright and acidic and fun. It’s engaging, easy to love simply but also easy to dig into over and over. A marker of a great whisky for sure.
